Recipe: Baked Sweet Potatoes with Tomatoes & Bacon
I had some time on Friday night and wanted to cook something different for dinner. Nothing fancy or very complicated, just a recipe that I hadn’t tried before. So I picked 3 ideas of recipe and asked Nicolas to choose one of them, without him knowing what they actually were. He chose recipe #2: baked sweet potatoes, with tomatoes and bacon.
Baked Sweet Potatoes
Serves 2 - Ready in 45 minutes
Ingredients
- 1 large sweet potato
- 2 smoked back bacon rashers, roughly chopped
- 3/4 plum tomatoes, roughly chopped
- 2 tbsp Philadelphia cheese (or crème fraiche)
- Black pepper
- To serve: green leaves, plum tomatoes, feta cheese, chives
Method
Steam the sweet potato for 30 minutes, until almost cooked through.
Preheat the oven to 200°C.
Take the sweet potato out of the steamer. Cut in half lengthways and bake for another 10 minutes, until completely cooked through.
Delicately spoon the flesh of the sweet potato, without breaking the skin. Mash it and mix it with the bacon, tomatoes and cheese or cream. Season with black pepper.
Spoon the mixture into the skins and bake for 5 to 10 minutes.
I served it with salad, tomatoes and some feta cheese previously marinated into olive oil and herbes de Provence.
