A Lemon Pound Cake for the Rails Rumble ‘09
When your other half is a hopeless geek who decides that he wants to spend his whole weekend at work to take part in some sort of crazy competition, there’s not much you can do really. Basically, he’s going to code for 48 hours, sleeping and eating only if there’s a few minutes spare to do so. Last year, he had done it at home, but this year he thought it would be more fun to do it at the office with his colleagues (who, by the way, are certainly as crazy as he is… no offence). So to support them, I did the only thing I found useful for them: I baked cakes.
The first one is a lemon pound cake, know in French as “quatre quart”, one of Nicolas’ favourite sweets. The recipe is dead simple and very quick to make. You can add any flavour you like: lemon, almond, vanilla, cocoa, orange… I usually use lemon and I am a fan of citrus-flavoured cakes.
I didn’t taste the cake myself but heard that it had gone down pretty well with the guys… The second one is a carrot cake. They’ll get it tonight or tomorrow to encourage them for their second day of crazy work.
Ingredients
- 3 eggs = 160g
- 160g sugar (I used 120g golden caster sugar and 40g brown sugar)
- 160g flour
- 1tsp baking powder
- 160g butter, melted
- 1 lemon (finely grated zest and juice)
Method
Pre heat the oven to 180°C.
Start by weighing the eggs and adjust the flour, sugar and butter quantities appropriately.
Whisk the eggs with the sugar, until white and fluffy.
Add the flour and baking powder. Mix well.
Add the butter. mix well.
Finally stir in the lemon zest and juice.
Pour the preparation in a cake tin and bake for approximately 30 minutes.
