Lemon Meringue Pie

Everyone has a favourite dessert. Something that makes us happy. Something that we could eat again and again without ever being fed up. It’s not always an obvious choice and a rather difficult question to answer, especially when you like everything.

I know lemon pie is by far my older brother’s favourite dessert. But what I didn’t know - or didn’t remember - is that it’s also my fiancé’s favourite! I can tell you he was the happiest the day when he came back from work and saw the lemon meringue pies in the kitchen! And I love when my food makes people so happy. After all, it’s what it is about, isn’t it?

I used a recipe which I found on the BBC Good Food website and halved the proportions for 2 individiual tarts. They were perfect!

For the next one, I promised Nicolas it would be a biiiiiiig one! Just need to find a very large tart mould now.
