Recipe: Courgettes a la Romana

Looking for an easy recipe for a light dinner? Don’t want to spend too much time preparing something? This recipe is definitely for you then. It requires very little preparation, about 10 minutes I would say. Then all you have to do is put the dish in the oven and let it bake… It tastes beautiful and you can adapt the recipe to your taste with any herbs you like.

Courgettes a la Romana

Serves 2 - Ready in 1 hour

Ingredients

2 courgettes
2 or 3 tomatoes
50g Parmesan or Cheddar cheese, finely grated
1 garlic clove, crushed
2 tbsp olive oil
1 tsp herbes de Provence
salt & pepper

Method

Preheat the oven to 180C / gas 4.

Cut the courgettes in 2 lenghtways. Remove the seeds with a spoon and place the courgettes in an oven-proof dish.

Cut the tomatoes in little cubes. Add the crushed garlic, herbes de Provence, salt and pepper.

Fill the courgettes with the tomatoes. Drizzle with olive oil and put in the oven.

After 20 minutes, add the grated cheese on top of the courgettes and bake for another 30 minutes.
