Recipe: Tea Cookies - Recette: Biscuits au Thé
Last week end I was in a mood for cookies. I wanted some for tea time and instead of going to the shop across the street to buy some, I decided to bake some. I wanted a simple recipe. Nothing fancy or too complicated. Just a good cookie for tea time. And I thought of this recipe, which I had already tried once and proved to be very successful.
I am not used to using tea leaves in cookies or cakes but this recipe is simply delicious. I used Lady Grey tea but you can choose another type of tea depending on what you like. However, if you’ve never tasted it, you should really do so. It’s an Earl Grey tea with a hint of citrus. Very nice!
Tea Cookies
Makes about 35 cookies - Ready in 1h30
Ingredients
- 200g flour
- 150g unsalted butter, at room temperature
- 115g light muscovado sugar
- 1 Lady Grey tea bag (Twinings)
- 1 egg
Method
Beat the butter and sugar until light and creamy.
Stir in the Lady Grey tea leaves until well combined. Beat in the egg, then carefully fold in the flour.
Using your hands, roll the dough on a lightly floured surface into a cylinder - about 20 cm long.
Wrap the dough in cling film and chill for 1 hour until the dough is firm enough to slice.
Using a sharp knife, cut the dough cylinder widthways into 5 mm slices and place, slightly apart, on pre-lined baking sheets.
Bake for 10-15 minutes until lightly browned.
Transfer the cookies to a wire rack and leave to cool completely before serving.
