Recipe: Beef & Tomato Soup - Recette: Soupe au Boeuf et à la Tomate

Spring may have arrived but evening and nights are still chilly and we still enjoy a nice warm soup for dinner. Earlier this week I cooked a Beef & Tomato Soup, inspired by this beef vegetable soup recipe. It was very tasty and can be re-warmed well the following day.

Beef & Tomato Soup

Beef & Tomato Soup

Serves 3/4 - Ready in 1h30

Ingredients

  • 400g stewing beef
  • 1l vegetable stock
  • 400g canned chopped tomatoes
  • 20g butter
  • 3 carrots, chopped
  • 2 celery sticks, chopped
  • 1 onion, sliced
  • thyme, parsley
  • salt & pepper

Preparation

Melt the butter in a casserole or heavy pan. Fry the sliced onion for 2 minutes until soft.

Trim the meat of all the fat and cut into small cubes. Put in the casserole and brown on all sides.

Add the chopped tomatoes. Cook on medium-heat for a few minutes.

Pour in the vegetable stock and add in the vegetables, thyme, salt and pepper.

Bring to the boil, then reduce heat and simmer for at least 1 hour or until the beef is tender.

Serve in warm bowls with fresh flat-leaf parsley.

Soupe au Boeuf & à la Tomate

Pour 3/4 personnes - Prêt en 1h30.

Ingrédients

  • 400g viande de boeuf (daube)
  • 1l bouillon de légumes
  • 400g sauce tomate ou tomates concassées en conserve
  • 20g beurre
  • 3 carottes
  • 2 branches de céleri
  • 1 oignon
  • thym, persil
  • sel & poivre

Préparation

Faites fondre le beurre dans une casserole à fond épais. Faites revenir l’oignon émincé 2-3 minutes.

Coupez la viande en petits cubes. Faites la revenir quelques minutes dans le beurre et l’oignon.

Ajoutez ensuite la tomate, puis le bouillon, les légumes, le thym, sel et poivre.

Portez à ébullition puis réduisez le feu et laissez mijoter au moins 1 heure. La viande doit être tendre.

Servez dans des bols chauds avec un peu de persil frais.
