Recipe: White Chocolate & Kiwifruit Tiramisu - Recette: Tiramisu au Chocolat Blanc & au Kiwi

I am always trying to have some variety in my recipe choices. For this week with kiwifruits, I already had muffins, a tart and a savoury dish. I was therefore looking for something different. Neither a cake nor a tart. I wanted a lighter dessert. Nicolas suggested a kiwifruit mousse with chocolate tuiles. Why not… But I finally found better: a tiramisu!

I found a recipe on the famous French recipe site Marmiton and then I changed it slightly to make it mine. I served it with chocolate tuiles, which are much easier to make than what I thought. You just need to melt some good-quality chocolate, make circles with a spoon on a sheet of baking paper, cut around each circle and put them on glasses for the shape until they are dry. Really easy!

Tiramisu

White Chocolate & Kiwifruit Tiramisu

Serves 3-4 - Ready in 30 minutes (+ 2 hours in the fridge)

Ingredients

  • 125g mascarpone
  • 80g double cream
  • 50g white chocolate
  • 2 eggs, separated
  • 3 tbsp icing sugar
  • 2-3 kiwifruits, diced
  • 6-8 digestive biscuits

Preparation

Whisk the icing sugar with the egg yolks until it is fluffly and white.

Break the chocolate into a saucepan and put over a pan of simmering water until it is completely melted.
Mix with the mascarpone and add to the egg-sugar mix.

Slightly whip the double cream and add to the mascarpone preparation. Stir well.

Whisk the egg whites until they form soft peaks. Add slowly and delicately to the mascarpone preparation.

The cream is now ready.

Mascarpone cream Diced kiwifruit Digestive biscuits

Take glasses, cups or whatever you want to serve the tiramisu in. Start by putting in a layer of cream. Add a layer of diced kiwifruit, then a layer of biscuits, another layer of kiwifruit and finish with a layer of cream. I have also added a few digestive crumbs on the top.

Leave in the fridge for a couple of hours before serving.

Tiramisu au Chocolat Blanc et au Kiwi

Pour 3-4 personnes - Prêt en 30 minutes (+ 2h au réfrigérateur)

Ingrédients

  • 125g mascarpone
  • 80g crème liquide
  • 50g chocolat blanc
  • 2 oeufs
  • 3 cs sucre glace
  • 2 ou 3 kiwis, coupés en dés
  • 6 à 8 biscuits (petits beurres, speculoos…)

Préparation

Battez les jaunes d’oeuf avec le sucre glace jusqu’à ce que le mélange blanchisse.

Faites fondre le chocolat au bain-marie. Ajoutez le mascarpone (hors du feu) et mélangez bien.
Ajoutez ce mélange aux jaunes d’oeuf et mélangez.

Battez légèrement la crème liquide. Ajoutez-la au mascarpone.

Battez les blancs d’oeuf en neige ferme. Ajoutez-les doucement et délicatement au mascarpone.

La crème du tiramisu est maintenant prête.

Dans des verres ou des coupes, disposez une couche de crème. Ajoutez une couche de dés de kiwis, puis une couche de biscuit, puis une deuxième couche de kiwi, et finissez par une couche de crème. Vous pouvez finir le tout par une couche de miettes de biscuits sur le dessus.

Mettez au réfrigérateur minimum 2h avant de servir.
