Recipe: Chocolate & Kiwifruit Tart - Recette: Tarte au Chocolat & au Kiwi

Kiwifruit and chocolate. I could not possibly miss the opportunity of baking a dark chocolate & kiwifruit dessert… It just felt right to combine those 2 ingredients.

The most difficult task was to find the perfect chocolate tart recipe. I can tell you it’s not an easy one because a chocolate tart can be too heavy, or too chocolaty (especially if you want to add fruits in it), or too sweet, or too bitter. I wanted the perfect balance between bitter and sweet, and a chocolate ganache which would not be too strong so that you could still taste the kiwifruit. I’ve looked at several recipes and I have finally made up one myself by combining a few of them.

For the pastry, I opted for an “improved” shortcrust pastry by adding more butter and a bit of sugar. For the chocolate filling, I’ve used good-quality dark chocolate, double cream and butter. Simple ingredients, nothing fancy and yet full of flavours and a delight for any chocolate fan!

Serves 6-8 - Ready in 1h (+ a couple of hours to set)

Ingredients

For the pastry:

  • 150g plain flour
  • 100g butter, at room temperature
  • 50g sugar
  • water

For the filling:

  • 120g good-quality dark chocolate (I used 70% cocoa butter)
  • 150g double cream
  • 40g butter, cut into small cubes
  • 2-3 kiwifruits

Preparation

To make the pastry, combine the flour and sugar. Add in the butter, cut into small cubes, and mix with your hands until the butter is well combined with the flour. It should resemble breadcrumbs. Then add water a little at a time, until it forms a dough. Be careful not to add too much water. If so, add more flour.

Once the dough is ready, leave it to rest at room temperature for half an hour.

Preheat the oven to 180°C / gas 4.
Roll out the pastry on a slightly floured surface. Bake for 25 minutes or until golden. As the filling of the tart does not need to be baked, the pastry should be completely baked at this stage.

While the pastry is the oven, you can prepare the filling.

Blend the dark chocolate until you obtain a thin powder. Put into a bowl.
Bring the double cream to a boil. Pour immediately over the chocolate and whisk at the same time.
Add the butter and continue mixing until you get a homogeneous filling.

Slice the kiwifruits. Put them onto the pastry.
Pour the chocolate filling over the fruits.

Leave to set for 1 hour or 2.Decorate with a few kiwifruit slices before serving.

Tarte au Chocolat & au Kiwi

Pour 6 à 8 personnes - Prêt en 1h (+1 ou 2h)

Ingrédients

Pour la pâte:

  • 150g farine
  • 100g beurre mou
  • 50g sucre
  • eau

Pour la garniture:

  • 120g chocolat noir (70%)
  • 150g crème liquide
  • 40g beurre
  • 2 ou 3 kiwis

Préparation

Pour faire la pâte, mélangez la farine et le sucre. Ajoutez ensuite le beurre coupé en petits cubes. Mélangez le tout avec vos mains jusqu’à obtenir plus ou moins une consistance de crumble. Ajoutez ensuite l’eau petit à petit jusqu’à ce que vous ayiez une pâte lisse et homogène. Si vous avez mis trop d’eau et que la pâte colle, ajoutez de la farine et continuez à travailler la pâte.

Laissez-la reposer 1/2h couverte d’un torchon.

Préchauffez le four à 180°C.
Etalez la pâte au rouleau sur une surface farinée. Faites cuire à blanc environ 25 minutes. Comme la garniture de la tarte ne nécessite aucune cuisson, la pâte doit être cuite entièrement à cette étape de la préparation.

Pendant ce temps, préparez la garniture.
Réduisez le chocolat noir en poudre. Mettez dans une jatte.
Faites bouillir la crème liquide. Versez-la immédiatement et lentement sur le chocolat tout en mélangeant au fouet.
Ajoutez ensuite le beurre coupé en petits cubes et lissez l’appareil jusqu’à ce que le beurre soit bien fondu. La préparation au chocolat doit être homogène.

Coupez les kiwis en rondelles. Disposez-les sur la pâte.
Versez ensuite le chocolat sur les fruits.

Laissez reposer 1 à 2 heures et décorez avec quelques rondelles de kiwis avant de servir.
