Recipe: Kiwifruit & Coconut Muffins - Recette: Muffins Kiwi & Noix de Coco

It’s been a long time since I last baked muffins. If I listened to myself, I would bake muffins and cupcakes every day, just because I find them so pretty (and so good!). Besides, you can really add any ingredients you’ve got in your cupboard (well, almost any ingredient). Each time I choose recipes with the weekly fruit, I suggest muffin recipes to Nicolas. He does not always agree with me. That’s why you don’t get muffin recipes every two days. However, this time I convinced him with these very tempting Kiwifruit & Coconut Muffins.

I got the idea from Taste.com.au, a website, which I didn’t know before, and adapted the recipe to my own muffin recipe. The result was just delicious. Soft, light (as light as a muffin can be…), fruity and refreshingly exotic. You really should try them!

Kiwi & Coconut Muffins

Kiwifruit & Coconut Muffins

For 6 medium-sized muffins - Ready in 45 minutes

Ingredients

  • 120g flour
  • 100ml lukewarm milk
  • 70g butter, melted
  • 60g brown sugar
  • 1 egg + 1 egg white
  • 2tsp baking powder
  • 3 kiwifruits, sliced
  • 30g + 2 tbsp dessicated coconut
  • 1tbsp finely grated lime zest
  • icing sugar to dust

Preparation

Preheat the oven to 180°C / gas 4.

Combine the flour and baking powder. Pour in the melted butter and stir well.
Add the sugar, then the milk. Mix well.
Finally add the eggs and whisk energetically until you get a smooth and homogeneous batter.

You can now add the lime zest and 30g coconut. Mix well.

Pour the batter into muffin cases.

Put 2 slices of kiwifruit on top of each muffin and sprinkle with coconut.

Bake for 20-30 minutes until the muffins are brown. To know if the muffins are done, stick a knife into them and remove. If the knife is clean, then the muffins are ready.

Take out of the oven. Dust with icing sugar and leave to cool on a cooling rack.

Muffins Kiwi & Noix de Coco

Pour 6 muffins de taille moyenne - Prêt en 45 minutes.

Ingrédients

  • 120g farine
  • 100ml lait tiède
  • 70g beurre, fondu
  • 60g sucre roux
  • 1 oeuf + 1 blanc
  • 2cc levure chimique
  • 30g + 2cs noix de coco râpée
  • 3 kiwis, coupés en rondelles
  • 1cs zeste de citron vert, râpé finement
  • sucre glace pour saupoudrez

Préparation

Préchauffez le four à 180°C.

Mélangez la farine et la levure. Ajoutez le beurre fondu, puis le sucre, le lait et enfin les oeufs, en mélangeant bien entre chaque ingrédient. Vous devez obtenir une pâte lisse et homogène.

Vous pouvez ensuite ajoutez le zeste de citron vert et les 30g de noix de coco râpée. Mélangez bien.

Versez la préparation dans des moules à muffins.

Déposez 2 rondelles de kiwis sur chaque muffin. Parsemez de noix de coco râpée.

Enfournez 20 à 30 minutes jusqu’à ce que les muffins soient dorés. Pour savoir s’ils sont cuits, plantez la pointe d’un couteau dans un muffin. Elle doit ressortir sèche et propre.

Sortez-les du four. Saupoudrez de sucre glace et laissez refroidir sur une grille.
