Recipe: Creamy Cauliflower Soup - Recette: Velouté de Chou-Fleur

There’s nothing better than a vegetable creamy soup to cheer you up on a cold winter evening… You can cook it with whatever vegetable you’ve got - squash, broccoli, carrot, asparagus or mushrooms for example. I’ve chosen cauliflower this time.

Creamy Cauliflower Soup

Serves 4 - Ready in 30 minutes

Ingredients

  • 1 cauliflower
  • 2 potatoes
  • Chicken stock cube
  • Water
  • 10cl double cream
  • 1tsp cumin
  • Fresh parsley leaves

Preparation

  • Cut the cauliflower in florets and the potatoes in small cubes.
  • Put into a saucepan.
  • Cover with water and add the chicken stock cube.
  • Cook on a medium heat for 20 minutes or until the vegetables are tender.
  • Blend the vegetables.
  • Add the double cream and cumin. Stir well.
  • If the soup is too thick, add some water.
  • Pour into bowls.
  • Add a few fresh leaves of parsley on top and serve immediately.

Velouté de Chou-Fleur

Pour 4 personnes - Prêt en 30 minutes

Ingrédients

  • 1 chou-fleur
  • 2 pommes de terre
  • 1 bouillon-cube
  • Eau
  • 10cl crème liquide ou crème fraîche
  • 1cc cumin
  • Persil frais

Préparation

  • Coupez le chou-fleur en fleurets et les pommes de terre en cubes.
  • Mettez le tout dans une casserole et couvrez d’eau.
  • Ajoutez le bouillon-cube.
  • Faites cuire à feu moyen pendant une vingtaine de minutes, jusqu’à ce que les légumes soient tendres.
  • Mixez la soupe.
  • Ajoutez la crème liquide et le cumin. Mélangez bien.
  • Si la soupe est trop épaisse, ajoutez un peu d’eau.
  • Versez dans des bols.
  • Décorez avec quelques feuilles de persil frais et servez immédiatement.
