Recipe: Clementine in Rosemary & Honey Syrup - Recette: Clémentines au Sirop de Romarin & Miel

I wanted to prepare a light desert full of vitamins and clementines yesterday and have tried this one: Clementines in a Rosemary and Honey Syrup. It was very good, light and refreshing. Ideal for an evening desert or after a full celebration meal!

Clementine with Rosemary Syrup

Serves 2 - Ready in 2h30

Ingredients

  • 3 clementines
  • 1 small sprig of rosemary
  • 2tbsp honey
  • 4 fresh mint leaves
  • 25cl water

Preparation

  • Peel the zest of 2 clementines.
  • In a saucepan, put the zest with the sprig of rosemary, honey and water. Bring to the boil. Set aside to infuse about 10 minutes.
  • Meanwhile, peel the clementines, keeping the whole fruit together.
  • Cut 3 slices in each clementines. Put them in a bowl.
  • Filter the liquid through and pour it onto the clementine slices.
  • Sprinkle with the mint leaves.
  • Leave in a cold place at least 2 hours before serving.

Clémentines au Sirop de Romarin et Miel

Pour 2 personnes - Prêt en 2h30

Ingrédients

  • 3 clémentines
  • 1 petit brin de romarin
  • 2cs de miel
  • 4 feuilles de menthe fraiche
  • 25cl d’eau

Préparation

  • Récupérez le zeste de 2 clémentines.
  • Dans une casserole, portez à ébullition l’eau, le zeste des clémentines, le brin de romarin et le miel. Retirez du feu lorsque l’eau commence à bouillir et laissez infuser une dizaine de minutes.
  • Pendant ce temps, épluchez les clémentines en les gardant entières.
  • Coupez chaque clémentine en 3 tranches. Placez-les dans un saladier, bien serrées.
  • Filtrez le sirop à l’aide d’une passette, et versez le sirop sur les clémentines.
  • Ajoutez les feuilles de menthe.
  • Laissez au frais au moins 2h avant de servir.
