Recipe: Sweet Potato & Vanilla Cake - Recette: Gâteau à la Patate Douce et à la Vanille
Today I’ve decided to make a dessert with my last sweet potato, as part of our week dedicated to this vegetable. What I like about sweet potatoes is that you can either cook savoury dishes or desserts, depending on what you prefer or want to eat. It’s been a few days since I last baked a cake so let’s go for a Sweet Potato Cake with Vanilla!
Serves 4-6 - Ready in 1h30
Ingredients
For the cake:
- 225g mashed cooked sweet potatoes (1 small sweet potato)
- 150g plain flour
- 110g butter
- 100g dark brown sugar
- 50ml yogurt
- 1 egg
- 1 vanilla pod (alternatively you can use vanilla extract but the taste won’t be quite the same)
- 1/2tsp ground nutmeg
- 1tsp baking powder
- 1 pinch of salt
For the icing:
- 100g icing sugar
- 3tbsp freshly made orange juice
Preparation
- Preheat the oven to 180°C and butter a cake pan (or use a silicon pan).
- Cream the softened butter with the vanilla seeds scraped out of the pod, sugar, ground nutmeg and salt.
- Add in the egg, slightly beaten.
- Mix well until well blended.
- Add the mashed sweet potatoes and yogurt.
- Combine the baking powder and flour and add to the mixture. Mix well.
- Pour the mixture into the pan.
- Bake for 30 to 35 minutes.
- Leave to cool.
- To make the icing, mix the icing sugar with the orange juice.
- When the cake is cool, spread the icing on top.

I’m eating it while writing this article and it’s just so good! Sweet but not too sweet, despite the icing, moist and with a good flavour of vanilla. Just as I like cakes! Trust me, you should definitely try this recipe.

Gâteau à la Patate Douce et à la Vanille
Pour 4-6 personnes - Prêt en 1h30.
Ingrédients
Pour le gâteau :
- 225g de patate douce cuite en purée (soit une petite patate douce)
- 150g de farine
- 110g de beurre
- 100g de sucre roux
- 50ml de yaourt nature ou fromage blanc
- 1 oeuf
- 1 gousse de vanille (ou de l’extrait de vanille mais le goût ne sera pas tout à fait pareil)
- 1/2cc de muscade
- 1cc de levure chimique
- 1 pincée de sel
Pour le glaçage :
- 100g de sucre glace
- 3cs de jus d’orange fraichement pressé
Préparation
- Préchauffer le four à 180°C et beurrez un moule à cake (ou utilisez un moule en silicone).
- Battez le beurre jusqu’à ce qu’il ait une consistance crémeuse, avec les graines de la gousse de vanille, le sucre, la muscade et la pincée de sel.
- Ajoutez l’oeuf battu. Mélangez bien.
- Ajoutez la patate douce en purée et le yaourt.
- Mélangez la levure dans la farine et ajoutez-les progressivement à la préparation. Mélangez jusqu’à obtenir une pâte relativement homogène.
- Versez la préparation dans le moule à cake.
- Faites cuire 30-35 minutes. Piquez le gâteau avec un couteau. Si la pointe ressort sèche, votre cake est cuit.
- Laisser refroidir.
- Pour faire le glaçage, mélangez le sucre glace et le jus d’orange.
- Lorsque le gâteau est refroidi, étalez le glaçage en une fine couche.
