Recipe: Sweet Potato Pancakes - Recette: Pancakes à la Patate Douce

Let’s go for a week of recipes with sweet potatoes! Here is my first suggestion: Sweet Potato Pancakes.

Sweet Potato Pancakes

We’ve eaten them this morning at breakfast with cheese and butter and they were really good. They are a nice alternative to classic pancakes and because sweet potatoes are sweet but not too sweet, these pancakes may be eaten with cheese, cream, jam, maple syrup… as you like.

Makes 8-10 pancakes - Ready in 40 minutes.

Ingredients

  • 400g sweet potato
  • 70g flour
  • 1 egg
  • salt or sugar
  • 2-3 tbsp sunflower oil

Preparation

  • Peel and dice the sweet potato. Cook in boiling water until very tender (about 20 minutes)
  • Mash the potato.
  • Add in the flour and egg. Stir well.
  • Season with salt or sugar as you like.
  • Heat the oil in a frying pan.
  • Spoon small amounts of the mixture in the pan and cook for about 2 minutes. Turn the pancakes over and cook for one more minute.
  • Serve warm.

If you don’t have time to prepare them in the morning, you can prepare them the night before and re-heat them in the oven (10 minutes at 180°C). They will be as good as freshly made.

Pancakes à la Patate Douce

Pour 8-10 pancakes - Prêt en 40 minutes.

Ingrédients

  • 400g de patate douce
  • 70g de farine
  • 1 oeuf
  • sel ou sucre
  • huile de tournesol

Préparation

  • Peler et couper les patates douce en cubes. Faites cuire dans l’eau bouillante une vingtaine de minutes, jusqu’à ce que les patates soit très tendre.
  • Passez-les au presse-purée.
  • Ajoutez la farine et l’oeuf. Mélangez bien.
  • Assaisonnez avec du sel ou du sucre, selon comment et avec quoi vous voulez manger vos pancakes.
  • Dans une grande poêle huilée bien chaude, versez des petites louches de pâte et laissez cuire 2 minutes.
  • Retournez les pancakes et laissez cuire une minute supplémentaire.
  • Servez chaud.

Vous pouvez servir ces pancakes au petit déjeuner avec du fromage, de la crème, de la confiture, du sirop d’érable, etc.

Si vous n’avez pas le temps de les préparer le matin même, vous pouvez les cuisiner la veille au soir et les réchauffer au four une dizaine de minutes à 180°C.
