Apple & Dried Prune Muffins - Muffins Pomme & Pruneaux

Baked this morning and still hot from the oven - I’ve had a bite though to be sure it was good - here is my new recipe for our “Apple Week”: Apple & Dried Prune Muffin.

Apple & dried prune muffin

Makes 6 muffins - Ready in 30 minutes.

Ingredients

  • 1 apple
  • 6 small dried prunes
  • 1 egg
  • 50g demerara sugar
  • 50g flour
  • 50g butter, melted

Preparation

  • Preheat the oven to 180°C.
  • Cut the peeled apple and dried prunes into small cubes. Place in 6 individual muffin moulds.
  • Beat the egg with the sugar. Add in the flour and melted butter. Mix well.
  • Pour the mixture over the fruits.
  • Bake for 18-20 minutes.

I recommend individual moulds because they are quite difficult to turn out and it it going to be easier to eat them once they are baked. If you have a muffin tin, you should use muffin cases or alternatively mix the apple and dried prune in the egg-flour-sugar mixture before pouring into the moulds.

It’s easy, quick to bake and delicious. Besides, it’s the first time I use these colourful silicon moulds, which were a Christmas gift. I love them and I think they look good on the pictures too. What do you think?

Muffins Pomme & Pruneaux

Pour 6 muffins - Prêt en 30 minutes.

Ingrédients

  • 1 pomme
  • 6 pruneaux
  • 1 oeuf
  • 50g sucre blond
  • 50g farine
  • 50g beurre

Préparation

  • Préchauffez le four à 180°C.
  • Pelez la pomme et dénoyautez les pruneaux. Coupez les en petits cubes.
  • Répartissez les entre 6 moules à muffin individuels.
  • Battez l’oeuf avec le sucre. Ajoutez ensuite la farine et le beurre fondu. Mélangez bien jusqu’à obtenir une pâte homogène.
  • Versez le mélange dans les moules.
  • Enfournez 18-20 minutes.

Je recommande des moules individuels car il est possible que les muffins soient difficiles à démouler. Si vous n’en avez pas, je vous conseille de mélanger les morceaux de pomme et de pruneaux directement dans la pâte avant de la verser dans les moules.

    Tes petits moules sont super mimis !
    Si j’ai des oignons chez moi (je prie pour qu’il en reste 4 dans le fond du placard!), ce soir, je fais la soupe à l’oignon !

    Ca, ça à l’air à ma portée niveau difficulté, jvais peut etre tenté pour un repas samedi soir, si je trouve des moules like yours!

    It was a Christmas gift, they were together with a cooking book on muffins. You should be able to find them in any large store in France, or on the internet maybe.

    Testés….et approuvés ! Super simple, super rapide à faire, et délicieux. Et effectivement les moules se trouvent partout (5euros la plaque de 6 à ma superette du coin), et sans problèmes pour démouler à partir du moment où on laisse refroidir 5 minutes.
    Ce soir apple pie, a suivre !
