Onion Soup - Soupe à l’Oignon

Last Friday, I told you about one of my favourite soups, the Butternut Squash Soup, and because we still need to recover from Christmas, here is another suggestion: Onion Soup.

At home Nicolas is usually the one who cooks it and I find it delicious.

Onion Soup

Serves 6 - Ready in 50 minutes.

Ingredients

  • 12 medium-size onions
  • 45g butter
  • 2 garlic cloves
  • 15g flour
  • 1.5l stock
  • 1 bay leave
  • salt and pepper
  • 6 slices of French bread
  • 60g grated cheese

Preparation

  • Slice the onions thinly - this is the part of the recipe that I do not like doing. I think that’s why Nicolas cooks it…
  • Melt the butter in a large saucepan. Add the onions and cook on a slow heat for 15 minutes.
  • Add in the flour and crushed garlic cloves.
  • When the flour has become brown, pour in the stock and add the bay leave. Cook for 15 minutes.
  • Season to taste.
  • Divide the grated cheese on the 6 slices of bread and put them under a hot grill to gratinate them.
  • Pour the soup in warm plates. Put one slice of bread on each plate and serve immediately.

Soupe à l’Oignon

Pour 6 personnes - Prêt en 50 minutes.

Ingrédients

  • 12 oignons de taille moyenne
  • 45g de beurre
  • 2 gousses d’ail
  • 15g de farine
  • 1.5l de bouillon
  • 1 feuille de laurier
  • sel et poivre
  • 6 tranches de pain
  • 60g de fromage râpé

Préparation

  • Emincez les oignons.
  • Faites fondre les oignons dans le beurre pendant 15 minutes.
  • Ajoutez la farine et l’ail.
  • Lorsque la farine a pris de la couleur, ajoutez le bouillon et la feuille de laurier.
  • Faites cuire pendant 15 minutes.
  • Salez et poivrez à votre goût.
  • Répartissez le fromage râpé entre les 6 tranches de pain et faites les gratiner sous le grill chaud du four.
  • Versez la soupe dans les assiettes chaudes. Déposez une tranche de pain sur chaque assiette et servez immédiatement.

    Maybe this is a stupid question Nathalie, but how do you do the stock (=bouillon) ?
    You put water and a Kubor ?

    Yes stock is made with water and a stock cube (Kubor). Bring to the boil and it’s ready.

    Ca y est !!! J’ai fait la soupe à l’oignon ce soir !! Mon 1er essai de Serial cooking !!
    Bon, je n’avais que des oignons rouges…et j’ai pas voulu attendre de faire les courses pour en prendre des “jaunes” !
    Alors c’était très bon !
    Je dirai juste que la tartine n’est pas facile à manger (on avait un peu l’air de petits cochons…), et que c’est peut-être mieux de la couper en morceaux et la mettre dans la soupe ensuite. Mais sinon la tartine entière présente très bien.
    Pour 2 personnes, j’ai mis 3 oignons et 1/2 litre de bouillon, et la soupe était assez “pateuse”, donc j’ai rajouté un peu d’eau pour la rendre plus liquide.

    Voilà !!

    my god I remember two years ago, the morning after max’s cousin’s birthday, we were washing out the village hall and the lunch meal was “onion soup”….
    as far as I am concerned I cannot eat that meal because onion and garlic are ingredients tough to digest (small quantities only), but it seems very good since max helped himself twice.
