Apple & Curry Cod - Cabillaud aux Pommes & au Curry

This is the 3rd recipe of our “Apple Week”, cooked yesterday night by Nicolas, because I’ve been sick for the last 2 days and not really in a mood for cooking. So he has decided to cook himself and he did it very well.

On the menu: Apple & Curry Cod.

Apple & curry cod

Serves 1 (I can’t really eat much but I tasted it and it was really good).

Ready in 30 minutes.

Ingredients

  • 1 cod fillet
  • 1 apple
  • 1 shallot
  • 1 tsp fresh parsley
  • 1 tbsp flaked almonds
  • 1 tbsp double cream
  • 1/2 tsp curry powder
  • salt

Preparation

  • Preheat the oven to 200°C.
  • Chop the shallot. Core and slice thinly the apple.
  • Place a few apple slices on a kitchen foil.
  • Place the cod fillet on top of the apples.
  • Add the double cream and curry powder.
  • Add the shallot, flaked almonds and parsley.
  • Season with salt.
  • Fold the kitchen foil and bake for 15 to 20 minutes.

You can serve this Apple & Curry Cod with a mixed salad: lettuce, apple, almonds and parsley. Nicolas recommends a mustardy sauce for the salad made with olive oil, balsamic vinegar, Dijon mustard and salt.

Cabillaud aux Pommes & au Curry

Pour 1 personne - Prêt en 30 minutes.

Ingrédients

  • 1 filet de cabillaud
  • 1 pomme
  • 1 échalotte
  • 1cc de persil
  • 1cs d’amandes effilées
  • 1cs de crème (épaisse ou liquide)
  • 1/2cc curry
  • sel

Préparation

  • Préchauffez le four à 200°C.
  • Emincez l’échalotte et coupez la pomme en fines lamelles.
  • Alignez quelques tranches de pommes sur une feuille de papier aluminium.
  • Placez le filet de cabillaud sur les pommes.
  • Ajoutez la crème et le curry sur le poisson, puis l’échalotte, les amandes effilées et le persil.
  • Salez.
  • Refermez la feuille de papier aluminium et faites cuire environ 20 minutes.

Vous pouvez servir ce filet de cabillaud avec une salade verte dans laquelle vous ajouterez quelques morceaux de pommes, des amandes et des échalottes.
